Lunch. Elote style corn on the cob. I ‘grilled’ it in my cast iron grill pan, used greek yogurt instead of mayonnaise, sprinkled it with garlic powder, salt, pepper and smoked paprika. And I sauteed some sweet potato and beets in coconut oil with salt and cinnamon on the side.
So yay, day 99! I spent all morning and afternoon with my family. We did the basket/egg hunt thing for the kids, and the a big late lunch. We left shortly after lunch to head back home. We got home around 7:45, unloaded, got the kids fed and put to bed and THEN I went to the gym.
I got there after 9 on Easter Sunday, and I was surprised that I wasn’t the only one there! There were an average amount of people there. I got on one of the treadmills with the tv screen and watched “My 600 Pound Life” while I ran. I did 4.25 miles. I had planned on doing 4, but I had less than 4 minutes left on the treadmill timer when I hit 4, so I just ran out the timer. I did the “random” setting on the treadmill.
That takes my Runnin’ Runnin’ monthly challenge up to 11.25 out of 50. That’s about right on track.
Went to yoga today. It was just fine. After our standing work and balancing (dancer and tree) we laid down flat on our backs to rest for 30 seconds before moving on to some floor work. When I closed my eyes, the room spun! I don’t know why I was dizzy, but I had to take a break in child’s pose for a few minutes. While I was in child’s, my stomach started growling. I’m guessing that I got hungry and maybe my blood sugar dropped.
I decided to honor my body and skip practicing inversions after class. Inversions and dizziness seemed like a bad idea. I ate a sandwich and some iced tea after class and within an hour I felt pretty normal. My shoulders and neck feel tight though.
In other news, I had my LASIK consultation/testing done today. It turns out that I am a candidate for LASIK, so I’ll be scheduling an appointment in the near future!
Food for today. Breakfast: cinnamon rice cake, peanut butter, coffee. Lunch/brunch: Veggie egg white scramble, potatoes, coffee, bloody mary. Dinner: roast cauliflower, a bit of whole wheat pasta.
Yesterday’s food. Breakfast: Cinnamon rice cake, peanut butter, banana. Lunch: Oven roasted celeriac and rutabaga over a bit of whole wheat pasta. Dinner: Shared an order of nachos with the hubby. I ate about 1/4 of that. It got soggy pretty quickly.
Breakfast. Same as yesterday. Lundberg Family Farms Cinnamon Toast Rice Cakes, Peanut Butter & Co. Bee’s Knees peanut butter, and banana slices. I also had coffee.
Lunch. Tried a new place that had wood fired chicken. I got the lunch special, 1/2 a chicken (dark meat) and two sides. I got butternut squash and macaroni and cheese for the 2y/o. With iced tea.
Dinner. Husband returned late from out of town and brought Italian takeout from the place down the road. It’s just ok. I had a big helping of salad, small helping of penne with creamy pesto and broccoli, and one bite of the stuffed chicken because it wasn’t that good. Also had a bread knot.
Breakfast: Lundberg Family Farms Cinnamon Toast Rice Cakes, Peanut Butter & Co. Bee’s Knees peanut butter. NOM. I also had coffee and half a banana.
Lunch: La Madeleine French onion soup and wild field salad. Mango iced tea.
Dinner: I roasted some broccoli in the oven with olive oil, garlic salt and sesame seeds. I put it on top of a bit of whole wheat pasta, then squeezed half a lemon on top. With water and a Ska Brewing Co Euphoria Pale Ale (that I nearly finished while I was cooking).
Lunch (only had coffee for breakfast, bad bad): I whipped up an Asian-style soup with random stuff from the fridge. Organic chicken Better than Bouillon, water, crimini mushrooms, baby bok choy, cellophane noodles, green onion, a splash of toasted sesame oil and I stirred in some organic miso paste too. Yum!
It has been a stressful week. Lots of running around like crazy, dentist drama, etc. So today, 4y/o was in school and 2y/o was in childcare so I could go to my dentist appointment. After I was done (no cavities, yay!) I took advantage of my child-free time to sit down and have a relaxing lunch, all by myself. I went to a Thai place that I like and had half of a big bowl of tom kha coconut soup with chicken, a fresh spring roll with tofu, and jasmine tea. I sat at the bar and ate, chatted with the bartender, and it was lovely. Then I went and got my kids and resumed normal life.
