Today is Mother’s Day! I was awoken to a proud little 4 y/o bringing me pancakes in bed. I took them downstairs to eat though, I honestly don’t quite get eating in bed. My husband made coffee, and then I headed off to trampoline aerobics. It was a great workout as always. Lots of leg work today, a little arms too, and a lot of bouncing.
After trampoline, I headed to the mall all by myself. Mothers out there will realize that this is a big deal. I stopped for lunch at a fancy Cheesecake Factory type place. There was a two hour wait. But I was a party of one, perfectly content to skip the line and sit at the bar. It was fantastic. This is the way I want to do Mother’s Day brunch every year! I had a grilled chicken and avocado salad and a bloody mary.
Then I went shopping! For about 5 hours. All by myself. I got some new shorts from Lulu, along with two pieces from Hard Tail, and some various shirts from Gap and H&M. Then I came home and found 2 dozen red roses, happy kids, a clean house and my husband had even done all the laundry. He also smoked a turkey breast and made mashed potatoes and stuffing from scratch, and popped open a bottle of Prosecco. And then he put both kids to bed!
I’m feeling like a very lucky mama!
Breakfast. Same as yesterday. Lundberg Family Farms Cinnamon Toast Rice Cakes, Peanut Butter & Co. Bee’s Knees peanut butter, and banana slices. I also had coffee.
Lunch. Tried a new place that had wood fired chicken. I got the lunch special, 1/2 a chicken (dark meat) and two sides. I got butternut squash and macaroni and cheese for the 2y/o. With iced tea.
Dinner. Husband returned late from out of town and brought Italian takeout from the place down the road. It’s just ok. I had a big helping of salad, small helping of penne with creamy pesto and broccoli, and one bite of the stuffed chicken because it wasn’t that good. Also had a bread knot.
Lunch (only had coffee for breakfast, bad bad): I whipped up an Asian-style soup with random stuff from the fridge. Organic chicken Better than Bouillon, water, crimini mushrooms, baby bok choy, cellophane noodles, green onion, a splash of toasted sesame oil and I stirred in some organic miso paste too. Yum!
Food diary for the day. I fully realize some of my dinner photos don’t look appetizing. The restaurant was dark and it was an iPhone photo with flash.
Pre-gym breakfast: Whole Foods 365 organic string cheese, water.
Post-gym breakfast: Einstein Bros cranberry bagel, plain. Coffee.
Lunch: Leftover Thai. Tom Kha Coconut chicken soup. Plain La Croix.
Dinner: Tonight was the night my husband and I went out to celebrate Valentine’s Day. We got childcare for the kids, and went to a nice restaurant. They had a Valentine’s Day menu that featured appetizer, entree, side and desserts for each person. I tried to keep healthy choices in mind as I made my selections. I chose the field green salad with vinaigrette (over the blue cheese wedge and caesar, which had more fattening dressings). I chose the 12oz NY strip steak (picture taken after I ate, then realized I never took a pic). Admittedly, it was still a hunk of beef. I didn’t eat the whole thing, and I chose the leaner cut of beef. For my side, instead of something creamed, or potatoes, I went with mushrooms. For dessert, my husband and I each ate one chocolate covered strawberry. I also had a dirty martini and a mojito. It was by no means a healthy, low calorie dinner, but it was an indulgence, a special occasion and I tried to make somewhat sensible choices.
Tomorrow I’ll work it all off on the trampoline!
It has been a stressful week. Lots of running around like crazy, dentist drama, etc. So today, 4y/o was in school and 2y/o was in childcare so I could go to my dentist appointment. After I was done (no cavities, yay!) I took advantage of my child-free time to sit down and have a relaxing lunch, all by myself. I went to a Thai place that I like and had half of a big bowl of tom kha coconut soup with chicken, a fresh spring roll with tofu, and jasmine tea. I sat at the bar and ate, chatted with the bartender, and it was lovely. Then I went and got my kids and resumed normal life.
Lunch. Leftover rotisserie chicken on white corn tortillas with pico. Side of corn and potatoes. Half a Mars orange from my Greenling co-op. Coconut La Croix.
