Dinner. “Whole Grain Blend” with brown rice, red wheat, etc. it had pecans, and I added chopped dried apricot and green onion. Zucchini sauteed in EVOO with onion and garlic, salad with romaine, carrots, red onion, avocado, sugar snap peas and dressed with Bragg Healthy Vinaigrette. And water.
After an hour on the AMT, I was starving! I had a Groupon Now credit for $10, so I used it on a local cafe. I love this dish there. It is brown rice, black beans, a bit of sour cream, cheese, pico and guacamole, served with chips and salsa. So tasty and filling. My 2 year old and I destroyed it.
9:30 and I just realized I never ate dinner. I had a bunch of brown rice and veggies for lunch, then made some Whirley-Pop popcorn with coconut oil (SO GOOD) at around 3 and shared it with my kids. I’m not even hungry. Maybe I’ll have an apple and some peanut butter.
Dark photo of dinner at to Grand Lux Cafe with my sister. We split a small salad and an entree. Both were more than ample, even split between two hungry people. The small salad we split was the roast beet and goat cheese salad with hazelnut vinaigrette. The entree was indochine chicken and shrimp with brown rice. Both were tasty!
